• You Had Me at Tacos

My grandmother on my dad’s side was old school. She was a meat and potatoes kind of lady of Scotch-Irish descent. All other food was of no interest to her. Other cuisines didn’t come up much in conversation, but I do remember she considered tacos a snack, not a meal. I am not sure why that amuses me, but it does. A couple generations later, my family loves tacos. They are fast, easy and can be extremely versatile. You can have them for any meal, even breakfast. They do make a mean snack, too. We like classic ground beef tacos, chicken, and even fish. This week, I thought I would…

  • Healthy Halloween Fare

2020 has been a doozy of a year, no matter who you are or where you live. Being that Halloween this year is on a Saturday, will have a full moon AND it is the night we gain an hour for Daylight Saving time, I am anticipating it could be a strange night. Most neighborhoods around here plan on carrying on with trick-or-treating, with a few adjustments. We will be putting candy in individual bags, and handing them out at the end of our driveways, rather than approaching each threshold. So, all the little (and not so little) ghosts and goblins with still get plenty of sugar this year. Knowing…

  • Quick Bites

Here we are, mid-August and school is about to start. Well, school online, at home, but still, routines must be established again. We have gotten a bit lazy since March. The school day with be starting at 7:25 a.m. and I am not going to lie – this is going to hurt. It may be difficult to get a good breakfast in before the start of the day, but I hope to have some healthy easy lunch options for the girls to grab. I will be wearing the hat, or hair net, of the school lunch lady. My kids have out grown sandwiches, sadly, so I hope to keep some…

  • Summer Veggies

I love fresh veggies. Once upon a time, I attempted to grow some in our yard. But between the deer, squirrels, birds and caterpillars, I rarely got even a tomato without something else having nibbled it already. I surrendered and now I stick to flowering plants and bushes. Even these I need to defend from the bunnies. I now happily support our local farmers market. They do all the work and the end result is reasonably priced, beautiful seasonal produce. Right now, our market is just starting to get the goods, so to speak. Fresh berries are in season, but so are the perfect tiny sugar snap peas, fresh garlic,…

  • All-Season Soup

So, it’s SUPPOSED to be Spring here, but we have had a cold snap this week. People have been advised to cover their tender plants, just when they were getting excited about all the warmth and sunshine. While it is fleeting, the cold always puts me in the mood for soup. Some people think soup is a seasonal thing, but I love it and could eat it year-round. After running errands on a cold and soggy day this past week, I was inspired to whip up some Minestrone. I think my first experience with Minestrone was at a certain popular Italian restaurant chain that features all-you-can-eat soup, salad and breadsticks.…
