• Warming Yourself From the Inside Out

This has been quite the weather week for most of the country. Thankfully, here in the Raleigh area, all we have gotten is cold rain – LOTS of cold rain. It is the perfect weather for a big pot of comforting soup. We have always liked chicken tortilla soup, especially when it’s creamy. I found a recipe for just such a thing hiding in my saved files and thought we would give it a try. The recipe comes from www.thecookierookie.com. Her recipe can be made with uncooked chicken breasts, or with cooked rotisserie chicken. I had a package of pulled rotisserie chicken I had recently bought at Costco just waiting…

  • Soup for Sniffles, Aches & Pains

The Covid pandemic has left many lasting effects on us all. Small businesses are hurting still and sadly some have closed. Local schools are still largely remote, or meeting in person very differently than before. Every time you sneeze or cough in public, you feel like a leper and wonder to yourself if the virus has found you. This week, I was doing my thing, running errands to grab report cards and school photos, minding my own business, when BAM! My body started to ache all over. I tried to ignore it, but something was trying to take me down. Could it be the dreaded Covid?? No fever, no cough,…

  • All-Season Soup

So, it’s SUPPOSED to be Spring here, but we have had a cold snap this week. People have been advised to cover their tender plants, just when they were getting excited about all the warmth and sunshine. While it is fleeting, the cold always puts me in the mood for soup. Some people think soup is a seasonal thing, but I love it and could eat it year-round. After running errands on a cold and soggy day this past week, I was inspired to whip up some Minestrone. I think my first experience with Minestrone was at a certain popular Italian restaurant chain that features all-you-can-eat soup, salad and breadsticks.…

  • Mama Edie’s Hamburger Soup

As I talk to more people about food, I have discovered that cuisine, like clothing, tends to go in fads. Pork chops and Rice-A-Roni, Chicken A La King, and Salisbury Steak are dishes synonymous with the 80’s and my childhood. Of course, some of these fads vary by region, but many followed popular cooking crazes that swept the masses. Our kids will tell their kids about the kale salads, turkey burgers and slow cooker meals their moms had in their meal prep rotation. If you were a child of the 80’s in the Midwest, it’s likely that you grew up eating some form of cabbage soup.  It was fairly healthy,…

  • Instant Pot Magic

It seems that every couple of years, a new craze sweeps across the kitchens of America. One of the most recent crazes has been the Instant Pot, which is a countertop electronic pressure cooker that promises to do so much more. I was intrigued about this mystical pot, and read lots of reviews and recipes before finally jumping on board. I found one on a decent Cyber Monday sale last November. Since then, I have been learning to master this new contraption. Let me clarify that Instant Pot is a brand of appliance, and the type I own. There are other brands and many models to choose from and my…
