Granola Clusters

Ingredients for Granola Mix:
 5 cups Quick Oats
 3 cups Mixed Nuts and Seeds
 2 cups Dried Fruit
 1 ½ tsp Ground Cinnamon
Ingredients for Syrup:
 2 Sticks Butter
 ½ cup Real Maple Syrup
 ¾ cup Honey
  cup Water
 1 cup Packed Light Brown Sugar
 3 tsp Vanilla Paste
 ½ tsp Kosher Salt

Measure out 5 cups of Quick Oats. Pop 2 cups into a food processor to grind into a fine powder.

Preheat the oven to 350º or 325º on convection. Measure out the nuts, seeds and fruits and add to a big bowl.

Combine oats, nuts, seeds and fruits with cinnamon in the large bowl.

On the stovetop, over medium heat, bring the butter, honey, maple syrup and water just to bubbling. Stir frequently. Remove from heat and add vanilla and salt. Stir to combine well.

Pour the syrup mixture into the large bowl of dry ingredients and stir well. Allow to rest for about 10 minutes.

Spread the mixture onto a large rimmed baking sheet. Press firmly into the pan. Bake the mixture for 20-22 minutes until just starting to brown.

Remove the pan and allow the granola mixture to cool completely, then break apart into pieces.

Pop the pan bake into the oven for another 15-20 minutes, until the granola is golden brown. Allow it to cool again.

Break into pieces again and store in an airtight container for up to 2 weeks.
