• Thanksgiving’s Forgotten Meal

Most families will be having a very different kind of Thanksgiving this year. Traditionally, this is our biggest family holiday, with most of my side of the family coming to town for the weekend. Sadly, this year it will just be our local family, a whopping 8 of us altogether. In years past, we are usually buzzing with activity early in the day, with family popping in and out of my front and back door, prepping food for the early afternoon main-event meal. Our family likes to eat THE meal around 2 p.m., and then a light dinner in the evening, consisting of turkey sammies in all of their glory.…

  • Blueberry Buttermilk Biscuits

When we first moved to North Carolina, we were introduced to the Southern delights of Bojangles’. This delightful fast food restaurant that started in Charlotte, NC serves spicy fried chicken, chicken strips and biscuits. They make savory breakfast biscuit sandwiches and our personal favorite, BoBerry Biscuits. BoBerry Biscuits are a flaky biscuit bedazzled with blueberries and topped with a vanilla glaze. They are a delicious treat we get occasionally on weekends or on road trips. Since I recently started making biscuits in my cast iron skillet, I began to think about making my own blueberry biscuits at home. We could have them anytime and make a good thing even better!…

  • Breakfast Burritos

Recently, I was looking for a freezable meal to take to a friend, and I didn’t want the standard casserole or pasta dish. I happened upon a blog that featured breakfast burritos that can be individually wrapped and frozen for future use. Bingo! Everyone loves breakfast and you can eat breakfast any time of the day. The concept is perfectly simple, but it takes a little time to prepare. You can easily customize them to suit your tastes and they are very easy to reheat later. First things first, you want to prepare all of your ingredients before assembling your burritos. I chose bacon and sausage, but you could easily…

  • Peach Bourbon Tart

Last Saturday, I had a a breakfast gathering, and wanted to bring something fruity and seasonal to share. I had a bunch of gorgeous farmers market peaches begging to be the star of the dish. Naturally, I turned to Pinterest for an easy, delicious option. I found a recipe for Peach Tart, using pre-made puff pastry. I used the recipe from www.womanscribbles.net exactly for the dish I shared at the breakfast, and everyone loved it. I liked it, too, but also felt I could improve on it a bit. I ruminated on it while I made lunch for my family, thinking on what might make the peaches really sing. I…

  • Breakfast for Lunch & Dinner

I love breakfast. Eggs and bacon, crispy hashbrowns, omelettes, nice fluffy pancakes and waffles. If I am at a restaurant that serves lunch or breakfast food, I am always going to go for breakfast. While I love getting breakfast when eating out, we also have a tradition of a nice homemade breakfast on Saturday mornings. Of course, some Saturdays are too busy for that and all the clean up that comes after breakfast. But sometimes breakfast makes a great dinner, as it can be thrown together with little planning. You can even make your breakfast, lunch or dinner extra fancy with a few special ingredients. While dining out for lunch…

  • Instant Pot Yogurt

One of the reasons I decided to add an Instant Pot to my list of kitchen gadgets was the appeal of having a yogurt maker. I had seen yogurt makers in kitchen and cooking catalogs, with their cute little individual cups. I did covet those, but the Instant Pot won out for all of it’s extra capabilities. Some of you may be wondering why on earth I would want to make my own yogurt when there are so many varieties available in grocery stores these days. Well, I like yogurt. Greek yogurt, French yogurt, Australian style yogurt, etc. But I have always had this elusive memory of the taste of…

  • Managing Morning Munchies

Alas – the end is nigh!  Ok, that’s maybe a tad over dramatic, but the end of the summer is upon us and if your kids aren’t already in school, they will soon be heading back.   We have one in year round school and she has been in for 4 weeks already.  Our oldest heads to high school next week and will be catching the bus before the sun is up. That being said, mornings are not easy in our house.  The key to success is organization – and a lot of strong coffee.   We do what we can the night before – pack school bags, pick out…

  • Muffin Munchers

When I was very young, our family lived in Washington State.  My older sister bought me a series of books written and illustrated by Seattle based writer Stephen Cosgrove and illustrator Robin James. My favorite book is called, “The Muffin Muncher.” It’s an endearing tale about a dragon who moves under the drawbridge of a castle and begins to exploit the muffin-baking king out of all his baked goods.  The king and his villagers run out of supplies as the dragon eats up all of their hard work.  In the end, the dragon decides to help the villagers and king by bringing the fire power to the ovens in exchange…
