• Easy Weeknight Meals for Hot Nights

It is HOT here in NC this week – the heat index has been above 100º all week. As we say here in the South, it’s not the heat, it’s the humidity that makes it so unbearable. On these kind of nights, no one feels like cooking. You want something fresh and easy, quick and dirty. Well, not dirty. No one wants dirty food. Anyway, awhile back, we were introduced to Barramundi. Barramundi is a fish. Sustainable sea bass to be more specific. It is native to Australia and the Indo-Pacific. • Salsa Season

Last week, we took a family vacation to the beach, our all-time favorite place. It was so wonderful to get away from this weird new normal for just a little while. I picked up another bucket and started thinking about making strawberry salsa. We also have gorgeous mangoes in the house so I thought that would be great in the mix, too. I did a little hunting on Pinterest and found a couple of recipes to try, but you know I had to make it my own. Of course the…

  • Millions of Peaches

You can find them in the grocery store this time of year, some stores even sell locally grown peaches.  But my favorite place to buy them in the NC State Farmers Market. (I’m starting to think they should give me a discount for all this advertising.). I am a loyalist, I buy my peaches most often from the same stand – Michelle’s Fresh Fruits.  I have…
