• Slow Cooker Saviors

We are squarely in the middle of September and our calendars are getting more full by the day. Along with school, we are running around to various appointments multiple times a week. It is definitely a good time to pull out the slow cooker and work that baby. We love Salsa Verde, and I have seen recipes for Salsa Verde chicken in the slow cooker, so I thought we would give that a shot this week. There are a lot of variations, but I chose to try a super simple recipe from www.sugarylogic.com. The recipe only uses 5 ingredients and requires minimal prep. It is a great option for busy…

  • The Tuscan Chicken Bandwagon

If you follow any food blogs or just like gorgeous food photos on Instagram, you hay have noticed Creamy Tuscan Chicken swept through the universe a while back. I was intrigued, but honestly not enough to try it. For one thing, it really isn’t very pretty. Well, here we are with Summer Swim in full swing for our youngest daughter, meaning we are at the pool 4 days a week from 4:30-5:30, which is prime dinner-making time. So I hit the Internet to look for healthy meals that can be prepped ahead, like casseroles or slow cooker meals. A slow cooker version of Tuscan Chicken popped up, so I decided…

  • Raising Little Women

This past week, I took my mom and daughters to see the latest movie version of “Little Women.” It was a wonderful movie based on the classic book. If you have not read “Little Women”, or have lost your copy as I have, you can get a complete and unabridged 1896 illustrated edition on Amazon. I have always loved the story of the March girls, 4 very different sisters and their love for one another as they grow into young women. But I particularly love this movie version over others done in the past. Each character was crafted lovingly, somehow with more depth than past interpretations. I used to closely…

  • Slow Cooker Season – Finally

It has finally starting feeling like Autumn here in NC, cooling to the 60s, and setting the mood for cooking good, warm comfort foods. One of my favorite ways to cook these great Fall comfort foods is in the slow cooker. Not only does it make life a lot easier in the evening, but it fills the house with the smell of home-cooking. One of our favorite go-to slow cooker meals is Slow Cooker Chicken Chili. It is full of flavor, makes enough to share or have leftovers, and is made with things I usually always have on hand. This recipe requires a little bit of prep before setting the…

  • Exotic Made Easy

Every now and then, you need to shake up your normal dinner time routine and try something exotic. I love the spices and flavors in Indian cuisine but used to feel daunted by the thought of attempting it at home. One of the Indian dishes I love is Chicken Tikka Masala, a delicious creamy blend of tomatoes, spices and tender chicken. It is served over rice, and is wonderful sopped up with warm naan. As a side note, there is apparently some debate on the origins of the dish. Some say it was actually created in Glasgow, Scotland. That may seem strange, but the British have long had a love…

  • Comfort Food for Cold Nights

Fall weather seemed to come seemingly overnight for us.  One day, it was 80º, the next it was 60º, with temps in the 40s at night.  Brrr!  We have pulled out the sweaters and slippers and I am beginning to cook our favorite comfort foods. One of my favorite ways to cook our favorite comfort foods is with my trusty slow cooker.  I love to dump all of the ingredients in and go about my business while dinner cooks.  It fills the house with the tantalizing aroma of whatever is cooking, making our stomachs growl. Since acquiring a slow cooker, I have experimented with a few different beef stew recipes. …

  • The Taste of Fall

It’s officially Fall, though it looks a little different here in the South. It’s still 80º and the mosquitoes are still biting like ravenous vampires.  But I still love it.  I have purchased my mums and pumpkins for the front porch and am getting out the Fall garlands and wreaths. What really kicks off Fall in our house is the first batch of applesauce in the slow cooker.  Not only is it delicious, but it fills the house with an aroma that is better than anything Bath & Body Works can bottle. My favorite recipe starts with a trip to my beloved State Farmers Market in Raleigh.  There are many…
