Spring Delights
We have finally reached the best part of Spring here in North Carolina. The weather has warmed up, birds are nesting, everything is in full bloom and best of all, the blasted pine pollen is finally gone. We have the windows wide open and we are loving it. Along with all the sights and sounds that herald Spring, there are certain flavors that represent Spring. One of those flavor combinations is lemons and blueberries. Rolling with It
I had a different plan for the blog this week. But as we muddle through this strange time, I am learning to embrace each moment and let go of the things that really don’t matter. Just this morning, my dad and I donned face masks and gloves and braved a trip through BJ’s for paper goods and a few other essentials. Our face masks were from a protective set I bought at Home Depot a few years ago and never used. They were closer to the N95 type than a fabric mask and I must say the experience made me greatly appreciate the healthcare workers that have to wear them…

Classic Pasta Salad
I love pasta salad. I really haven’t tried one I don’t like. I love how versatile it is and I love that it is great by itself or as a side to almost anything, like hot dogs, hamburgers or even sandwiches. Pasta salad is infinitely easy. I like to cook my pasta the bare minimum of suggested time, so it stays a bit more firm and doesn’t just turn to mush when the dressing absorbs into it. Then you can use whatever veggies you like, add a bit of protein if you like with cheese or ham or salami. Add some spice or keep it smooth, the options are endless.…

Liquid Sunshine
Spring is one of the major reasons my husband and I moved to North Carolina. When we met, dated and married, life for us was in chilly Minnesota. Then a beloved friend moved to NC and began to tell me about this thing called “Spring.” She would email me photos of trees in bloom – in March. What?! Sunshine, flowering trees and green grass in Spring – in March?! We were immediately won over. Now that we happily live here, Spring still continues to be one of my favorite seasons in the South.
