• Zucchini Fritters

I see those photos from your gardens and the zucchini are still coming in. So this is the third installment of the Zucchini Trilogy – Zucchini Fritters. We had these quite a bit during the summers growing up. I am not sure why they left my mind, because I loved them even as a kid. I really haven’t met a fritter I didn’t love, sweet or savory. The fritters are fairly healthy also, with just a little bit of flour and cheese,…

  • Zucchini up the Wazoo

Last week I shared a recipe for Sautéed Squash as one way to use some of the zucchini that is so plentiful this time of year. I used up my zucchini and yellow summer squash, and as if by magic, it was replaced from a friend’s garden the very next day. Unfortunately for all of us, I find much more zen in the kitchen than I do on the road with my teen. Fortunately for me, summer is one of the best…

  • The Struggle is Real

I can honestly say that I am happy with who I am and how I look.  That was not always true, particularly as a teen, but at this point in my life, I am quite content with who I am.  Sure, I have bad hair days and some days with bags under my eyes, but I don’t have to please everyone, life’s too short for that.  I don’t have to look like the stick figure models in the magazines, as long as I’m happy and healthy. Ah, but there’s the rub.  Having passed 40, I can no longer eat anything I want any time I want without consequence.  But I…
