Hurricane Snacks

We are literally battening down the hatches here in North Carolina this week.  Hurricane Florence seems to be heading for us and the coast has already been evacuated.

We live in the middle of the state, but will still be walloped by this storm system.  We are expecting LOTS of rain and strong winds, which in our neck of the woods means downed trees and loss of power.

Like everyone else, we have removed all loose items from the yard and deck, we have strapped the deck furniture to the railings and stocked up on bread, water and batteries.

But more importantly, we have stock piled some snacks that don’t require power to sustain us through the storm.  This is essential to keep up spirits while being house-bound.  We have protein bars, fruit, sandwich fixings, etc., but it’s nice to have some homemade goodies, too.

One of our favorite snacks is trail mix.  It usually incorporates salty and sweet and provides a good source of protein.  There are many great store bought mixes out there, but some can be expensive and the sugar can be high.  If you have a little time, it’s easy enough to make your own.

It’s more than likely you have all the things in your pantry right now to make a decent trail mix. It is simple and extremely customizable.  You can blend together just about any combination that suits your tastes and any dietary restrictions your family may have.

To begin with, it’s nice to have a grain base.  You can use cereal of any sort, premade granola, pretzels or popcorn.  Then you can add any combination of nuts and seeds that you like.  You can finish it off with dried fruits and a splash of sweets, like M&Ms or chocolate chips.

Any seasonings or spices can be added to make the mix more complex.  You can experiment to your heart’s content.

The recipe I am sharing with you today starts with whole grain Honey Nut Cheerios, has 2 nuts and one seed, one dried fruit and one sweet addition.  My hope is that the nuts will sustain us and the sweet chocolate will give us a sugar boost that keeps us from griping at one another while we wait out the storm.

 4 cups Honey Nut Cheerios
 ½ cup Sliced Almonds
 ¾ cup Dry-Roasted Unsalted Peanuts
 ¾ cup Honey Roasted Pepitas
 ½ cup 50% Less Sugar Craisins
 ¾ cup Semi-Sweet Chocolate Chips
 2 tbsp Ground Cinnamon
 1 tsp Pink Himalayan Salt

Pour the Honey Nut Cheerios into a large bowl.

Add the nuts and seeds to the bowl.

Add the craisins and chocolate chips to the bowl.

Sprinkle the cinnamon and salt on top.

Stir everything together.

Store in an airtight container.
