Just Peachy

True confession – life has been really weird around here since Covid entered the scene. I know it has been weird for most people, and it is beginning to feel like nothing will ever be quite the same again.

We are gearing up for school to start next week, but only our youngest daughter is going back to the school building. Our oldest will be finishing high school virtually, while also expecting a baby. So, yeah, “normal” is not really coming back around here.

A year ago, I could not have possibly imagined that I would become a grandma at the age of 47, or that my daughter would be a mother before she turns 18. But here we are, and I fully trust that God has a plan for all of us through the coming days. That is not to say this will be easy. Things are about to get really surreal. But God’s got us and I hope we will be able to turn our story into a reflection of God’s glory.

The blog may get a bit sporadic, and may stray a bit from food as our world changes, but I will do my best to keep up and share recipes and recipe reviews with you as we go along. Maybe we will be making our own baby food in the near future.

Because we have had such a strange summer, I haven’t made it to the farmers market as much as I would like. But I have tried to get there occasionally to enjoy the best of the seasonal fruits and veggies. We grabbed some peaches on our last trip, and they have been delicious. As peaches go, you wait a bit for them to ripen, then they ripen rapidly and they need to be used. That’s where we were this week. So I hit the Internet to find a speedy, yummy peach recipe.

I found a recipe for mini peach tarts from www.aliceandlois.com. I have posted my own recipe for Peach Bourbon Tart, and to date that is still one of my favorites. But I liked this recipe because it was extremely simple, and I liked the appeal of individual servings.

The beauty of this recipe is that you use frozen puff pastry. This time, I used puff pastry from Lidl. Because Lidl is a European grocery store, some of the products are sized differently than American items. Their puff pastry is one of those items. Lidl’s puff pastry comes in a box of 6 sheets that measure about 4 by 7 1/2 inches, which makes them nearly perfect for this recipe. Simply thaw the pastry sheets for about 10 minutes, then cut them into 4 inch squares, or as close to that as you can, based on your dough sheets.

Wash, peel and cut your peaches and wash your blueberries.

Place the squares of pastry on a baking sheet lined with parchment paper, then place approximately 3 peaches in the center of each square. Beat an egg with 1 tbsp of water to make an egg wash, then brush that wash along the edges of the squares. Sprinkle with some raw sugar or turbinado sugar across each square. Bake them for 11 – 12 minutes or until golden brown.

Remove the pan from the oven and drizzle honey across the top of each tart and allow them to cool for 5 minutes before serving. Then repeat with the remaining dough and peaches. It’s that easy!

While we wait for baby to arrive, I am still looking for the perfect name for me. I feel too young for Grandma, and we already have a Mimi and a Nana in the family. If you have any great nicknames, I’d love to hear them.

    Thank you so much for sharing a square of this lucious, fruity pastry with your fruit loving Mama! As you know, I will always chose fruit deserts over chocolate ant day and this was especially wonderful!
    As for your new title to be used by your expectant grandbaby…sometimes they will make that decision on their own, as our Katie Joy did with me by using the Mimi. I just know that whatever she calls you it will be a term of indearment because you already love her and want God’s very best for her and her Mommy!
